Pregelatinized potato flour is not simply regular potato flour ground finer. Its performance depends on raw material preparation, moisture conditioning, controlled extrusion puffing, airflow drying, milling, and screening.

Fresh potato-based material is prepared into a uniform feed system, with moisture adjusted to support stable extrusion puffing. Proper conditioning helps ensure even heat transfer, controlled starch transformation, and consistent output.
The conditioned material is processed through an extruder under controlled heat, pressure, and mechanical shear. During this stage, potato starch is rapidly gelatinized and expanded, creating a porous structure that supports fast hydration, cold-water swelling, rapid thickening, and stable binding performance.
After extrusion puffing, airflow drying rapidly removes residual moisture while helping maintain clean flavor and stable powder condition. The dried material is then milled and screened to reach the required particle profile for instant soups, dry mixes, extruded snacks, bakery, sauces, meat products, and pet food systems.

Regular potato flour usually needs sufficient heat and time before starch develops its full thickening effect. Pregelatinized potato flour has already received a controlled gelatinization treatment, so it can disperse, hydrate, swell and build viscosity faster, including in cold or limited-heat systems. Buyers should still test flavour, hydration curve, final viscosity and shear stability because “instant” does not mean every grade behaves identically. In practice, compare the same dry weight at the same water temperature and mixing energy, and record the time to reach target viscosity and the water absorption of the paste. Request the grade TDS with gelatinization degree and moisture, plus a recent COA, and confirm the supplier’s recommended usage range before scaling the recipe.
Define the intended test concentration, water temperature, addition order, mixing energy, rest time and viscometer conditions. A high gelatinization degree may give faster viscosity build, but the required profile depends on whether the application is an instant soup, sauce, snack dough, filling or binder. Approve a viscosity-versus-time curve or application target rather than relying on one unqualified viscosity number. Include water absorption and moisture limits for the pregelatinized potato flour in the same specification, and name the reference method and unit so buyer and supplier laboratories measure the same quantity. A recent COA should show the actual batch curve values, and the signed document version should be referenced in every order confirmation.
Pre-blend the powder with other dry ingredients where possible, create a strong liquid vortex and add gradually rather than dumping into standing water. High salt, sugar, fat, pH, temperature and shear can change hydration and final viscosity, while prolonged high shear may break down some structures. Validate addition point, mixing speed, hydration time and hold conditions on the actual equipment. For a pregelatinized potato flour with high water absorption, a small change in water volume or temperature has a visible effect, so record the water ratio for each batch and keep a retained product sample for comparison. Use a written trial protocol and test the sample against your current approved material. Record sample lot, dosage, water ratio, water temperature, addition order, mixing speed, rest time, cooking or extrusion conditions, yield, texture, colour, flavour and process losses. Keep a retained sample and scale from laboratory to pilot and production trials; do not approve a full container only from appearance or a single beaker test.
The signed specification should identify test method, unit and limit for critical items such as appearance, moisture, particle profile, bulk density, hydration or viscosity, colour, flavour, microbiological limits and relevant contaminants. The lot COA should show the actual batch results for the agreed release tests, not simply repeat specification limits. Buyers should also confirm product name, grade code, lot number, production date, shelf life and document version.
Approve a target specification together with a retained reference sample and application test. Compare incoming lots using the same methods and trend critical data rather than judging each COA in isolation; include moisture, colour, particle distribution, hydration, viscosity and sensory performance where relevant. If a result drifts, quarantine the lot, share photos and trial records, and complete a documented root-cause and corrective-action review before release.
MOQ and price depend on grade, customization, bag and pallet format, order frequency, destination, documents and whether the shipment is LCL, 20-foot or 40-foot FCL. Request current copies of the supplier’s applicable food-safety certification, such as FSSC 22000, and HALAL certification when required by the market or customer. Verify the legal entity, manufacturing site, product scope, certificate number, issuer and expiry date rather than relying on a logo. Shipment documents may include commercial invoice, packing list, bill of lading, certificate of origin, health or sanitary documents and lot COA, subject to destination and contract.
